Overview:
The Coffee Innovation Lab is an experimental environment where Heleph pushes the boundaries of flavor, fermentation, and processing techniques. It is both a creative workshop and a training center for farmers, producers, baristas, and roasters.

1. Fermentation Experiments
The lab tests dozens of fermentation approaches including:
- Anaerobic sealed-tank fermentation
- Double-stage fermentation
- Koji-assisted fermentation
- Cold-temperature fermentation
- Extended cherry maceration
- Carbonic maceration with controlled gas flow
2. Drying Techniques & Infrastructure
We experiment with:
- Raised-bed optimization
- Shade-drying variations
- Parabolic dryers
- Mechanical dryers powered by renewable energy
3. Micro-Lot Special Editions
Small batches of experimental coffees are produced and documented. These lots are offered to roasters who appreciate new flavors and unique profiles.
4. Innovation Sharing & Training
The lab regularly hosts workshops for farmers, teaching them processing methods that enhance quality and market value.
